MSC: Pumpkin Patch Cupcakes

I was so excited to finally try a baked good involving pumpkin - being an Aussie, it's not something I'd ever come across, but after reading about 1,000,000 food blog entries raving about delicious pumpkin goodies, I was definitely interested to try this recipe out! Huge thanks to Kim for choosing this month.




I halved the recipe, and made 12 cupcakes and 4 mini-loaves. I iced the cupcakes with cream-cheese frosting, and topped the loaves with some granola before baking. They all baked up really easily, and I have to admit that I loved how easy this was to pull together.

So, as you can see in the above photo... my cream cheese icing was a flop (literally). Regardless, I was still interested to try the pumpkin cupcakes, especially after adding in all those yummy spices. I definitely need some more inspiration and tips from all the fab MSC'ers!!

Sadly, I wasn't crazy about these.. not sure what it was, perhaps I need to get used to pumpkin baked goods. I was tempted to double the spices, and wish I had done that. Hubby loved them though, and all are long gone now!

  2. I had the same problem with the cream cheese frosting the first time I made it. It just kind of oozed down and made helmets. Maybe it just needs more powdered sugar. They still look yummy. Sorry these weren't a huge hit. Sometimes they are better the next day. Thanks for baking along with me this month.

    As for this recipe, I doubled on the spices and added more puree than suggested for extra flavor. It worked and everyone love them.

  5. You've never baked with pumpkin before? Wow. I guess I totally take that for granted. I just bought a dozen pumpkins from a local farmer to turn into pies for Thanksgiving. Pumpkin pie is still my favorite, but these cupcakes were OK, too. Enjoyed reading your blog!

  6. Bummer that you didn't enjoy them. I've read a lot of the bakers doubled the spices so that might be worth trying. This is one of my favorite frostings so I'd recommend giving it a second chance. Maybe it was too warm? The cupcakes look wonderful nonetheless - great job!
