MSC: Zucchini Spice Cupcakes

I was so excited to start baking along with Betty and the rest of the MSC group that I whipped these up a couple of weeks ago.

Of course, once I got started I realised that I didn't have enough zucchinis in the house.. so I improvised and threw a carrot in instead. The mix really reminded me of the Dorie Carrot Cake recipe (except with zucchini). I possibly overcooked them a little, as they were a little muffin-like. I'll be interested to see if any other bakers had this trouble!

The end result was really tasty. The icing really set the cupcakes off well, I put heaps of extra orange zest in and it was deeee-lish! Hubby and I enjoyed one each, and our colleagues appreciated the rest!!

  1. I love all the modifications. That is my problem, I'm not brave enough. These turned out great and I'm sure tasted delish with the carrot. Great job!

  8. Thanks so much for baking with me this month Jodie! I'm glad I'm not the only one who is super excited about this group - I can't wait to try all of the recipes in Martha's book. Your cupcakes look perfect, love the piping job! What a terrific idea to add orange zest to the cream cheese frosting. I didn't think it could get any better, but I was clearly wrong because orange zest is a perfect addition!

  9. Wow, I really love your piping work, that's so awesome! I've been wanting to take a Wilton class at my local Jo-Ann's to improve my piping skills, and I think MSC is going to be my motivation to finally do it! And the orange zest is an awesome idea, I'll have to try that the next time I make the cream cheese frosting.

  10. Your icing looks so nice!! I want to learn to become better with frosting. I didn't have cream cheese I just used powdered sugar.

  13. I'm a little jealous that you went with the carrot. Carrot Cake is my fav. Although, I'll still give it to the ol' zucchini, it still brought the idea with it being a spice cake/cream cheese frosting! Found it interesting your addition of the orange zest! That sounds incredible! I'll have to try that!

    Yes, they were a little like muffins. But that is okay too. They were spicy and good w/ or w/out frosting.

    Mine also looked and tasted like muffins. So you were not the only one who experienced the muffin fiasco.

    The co workers inhaled them though, so they were not so particular! Ha!
